2 sweet potatoes, peeled
1 tsp salt
1/4 tsp pepper
1/2 tsp cajun seasoning
Preheat your oven to 450ºF and line a baking sheet with parchment paper.
In a sizable pot of boiling water, add the potatoes and cook for about quarter-hour. This will parboil the potatoes so they will be slightly firm but in a position to be pierced with a fork.
Drain the potatoes and let cool ten minutes. By using a box grater, grate the potatoes and place in a bowl. Season with salt, pepper, and cajun sweet potato tots.
Place on the baking sheet and drizzle with olive oil. Cook thirty minutes, flipping halfway through. Serve with ketchup.
Make sure to only cook your potatoes to the par-boil stage otherwise it’ll be very messy to grate.
If you want a crispier tot, throw them under the broiler until golden brown.
Tater tots were invented in the 1950s as a way to consume leftover potato scraps from making french fries. The invention originated from brothers Nephi and Golden Grigg who owned a potato processing plant in Oregon nearby the Idaho border. Gotta love their resourcefulness!

So We’ve tried to make sweet potato tater tots before and it didn’t work out. They either weren’t flavorful enough or the texture was off.
The secret here is the panko bread crumbs, that i seasoned namely with salt, sugar and cinnamon. It offers the tots a crispy outer crust with tons of flavor.
